Easy Cheese Scones

  • Beat 1 egg well
  • Add cup of ½ milk + ½ water
  • Add to egg and beat
  • Add 1 cup cake flour and a pinch of salt
  • Add 1 Tbls baking powder
  • Add 1 cup grated cheese and a pinch of cayenne pepper
  • Optional – Add some chopped parsley

Spoon mixture into greased muffin tray and bake at 200ºC for 10 min

 

Milk Tart

Pie shell

  • Cream ½ cup soft butter
  • Together with ½ cup sugar
  • Add 1 well beaten egg
  • 1 ½ to 2 cups flour
  • 1 tsp baking powder and pinch of salt
  • Mix well. Divide into 2 pie plates.
  • Bake at 180 deg until light brown

 Filling

  • 4 cups milk
  • 2 eggs
  • ½ cup sugar
  • 1 Tbls Maizena
  • 1 Tbls Flour
  • 1 Tbls Butter
  • 2 cinnamon sticks
  1. Heat milk
  2. Mix eggs, sugar, maizena and flour to a paste and slowly add to the heated milk
  3. Heat until thickened
  4. Pour into baked pie shell and sprinkle with cinnamon

Greek Chicken Pie – delicious

1 chicken

3 cups water and a stock cube

1 large onion chopped

1 leafy celery stalk

1 bay leaf

4 parsley stalks

salt and pepper

4-6 leeks

3 tbls butter

5 tbls flour

1 cup milk

½ cup parmesan cheese

3 eggs lightly beaten

ground nutmeg

250g filo pastry

 

  • place chicken in a pot with the water and onions
  • add celery, bay leaf and parsley
  • bring to a slow simmer, skim and add seasoning
  • cover and simmer gently for 1 hour until chicken is tender
  • cool a little in the stock and remove to plate
  • debone chicken and dice flesh, discarding skin
  • strain the stock, discard herbs and onions
  • reduce stock to 2 cups over heat
  • melt butter in a saucepan and fry leeks first, then blend flour and cook gently for 2mins
  • add the hot stock stirring constantly until the sauce thickens and bubbles
  • add milk, bring to the boil again and simmer for 2mins
  • stir in chicken, cheese and a good pinch of nutmeg
  • adjust seasoning and cool
  • stir eggs

To assemble the pie

  • pour the pie mix into a large dish
  • crumple the filo into balls and use them to cover teh chicken, then brush with melted butter
  • bake at 160 for 40 mins
  • let pie stand for 10mins before serving

Chicken a la King

1 Chicken

1 Onion

1 Red Pepper

1 Green Pepper

Mushrooms

2 cloves garlic

1 Tin Mushroom Soup

½ cup milk

1 Tbsp Flour

Bacon, ham or asparagus (optional)

  •  Season chicken and steam in little water. Cook for 1-1 ½ hrs until tenders. Remove skin and bones and cut up the chicken and place in a casserole dish.
  • Fry mushrooms and set aside.
  • Fry bacon and set aside.
  • Fry peppers and set aside.
  • Fry onion in butter and olive oil until golden brown. Add crushed garlic. Add mushrooms and blend in flour and pour on chicken stock.
  • Add mushroom soup and milk and stir until thickens.
  • Finally add peppers and bacon.
  • Pour over chicken, cover and heat at 180 degrees for 20 minutes or until hot.

Serve with rice and green salad.

Crumpets

  • Sift 2 cups flour
  • ¾ cup sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • 3 beaten eggs
  • 1 cup milk

Mix well and add 1 ounce butter
